If Peach chose to marry Mario, she would have possibly helped Bowser get over his obsession and helped her kingdom escape the fear of destruction. Both kingdoms could have finally lived in peace, but she rejected Mario thus forcing the war to continue.
I guess the bloodshed of both kingdoms wasn't as important to her as her feelings. Mario, her dedicated hero, deserves better.
